Ingredients: 2 eggs 1 tablespoon bacon grease 4 button mushrooms 1/2 roma tomato 1/4 cup yellow onion 1/4 cup sharp cheddar cheese 1 slice crumbled bacon 1 tablespoon fresh parsley |

Directions:
In a nonstick pan on medium heat, cook the bacon to your liking. Remove bacon from pan; crumble when cool. Chop onion and thinly slice mushrooms. Lightly pre-cook the onions in some of the bacon grease (butter works, too); remove from pan. Lightly pre-cook mushrooms in some of the bacon grease. Drain and remove from pan. Beat eggs in a bowl. Put a little more grease in the pan and add the eggs, swirling the pan so the eggs cover the bottom. When the eggs are mostly cooked (2-3 minutes), turn the whole sheet over. Add the cheese; cover and wait for the cheese to melt. Spread the remaining ingredients on one side of the eggs. Slide everything onto a plate; salt and pepper to taste. Flop one side over to make the classic omelette shape. Enjoy! |
